An earthy medley of roasted Japanese kabocha, broccoli, carrots, and seasoned lentils on a colorful bed of quinoa and kale; garnished with pumpkin seeds and dried cranberries. Served with Mint Vinaigrette. Mint vinaigrette served on the side.
